The five non-conventional legumes being studied show large contents of enzymatic inhibitors that vary according to the species (Table 8.3).65,66 Germination reduced the content of trypsin inhibitors in dolicho (53%) and jack bean (76%), whereas in cowpea it was increased to 61%. For the chymotrypsin inhibitors, the reductions were significant in mucuna (58%) and dolicho (36%). Hemagglutinating activity was found, without prior treatment of blood cells with trypsin, in jack bean, and germination reduced the levels of lectin to 50%. The rest of the legumes did not show relevant hemagglutinating activity.65,66
